We are committed to strengthening our community and believe that the farm to fork experience is good for everyone from small farmers to our diners. We serve the bounty of the seasons. We visit local farmer & produce markets weekly to purchase seasonal, fresh ingredients. Our breads & pizza dough are baked daily in house. We make our own mozzarella, pickles, sauces, dressings & vinaigrette from scratch. Our chicken is organic. We use fresh, pasture-fed beef, local goat cheese and Maryland soft shells.
We serve triple filtered water (on request). Our "take out" menus are available online. We recently upgraded all of our lighting, kitchen and bar equipment as part of Pepco's Energy Rewards program. We changed our ice machine and heater as well. We purchase third party energy that uses wind energy and energy credits. We are guided by these principles when we cater for you.
Some people wonder why we don't immediately give everyone water, straws, ketchup, etc. or small things like butter and jam. It's because we believe in taking care of the environment and not wasting food or our natural resources. We believe in being as cautious as possible and not putting plastic out there unless necessary. A lot of water is used to sanitize and wash glasses and dishes and we think about that. We offer premium ingredients and are happy to provide them to our customers who want them.
